I take a few slices off a round, then I made gingered beef and Mongolian beef with the rest. I got 8 meals from 1 roast.

 

Beef, Guinness and Stilton Sandwich

 Ingredients 

  • 2 tablespoons butter or bacon fat

  • 3 or 4 thin slices round roast

  • 1 shallot or small onion sliced

  • 2 or 3 sliced mushrooms

  • a splash of Guinness - you can drink the rest

  • Stilton crumbled - as much as you like

  • 1 baguette (I make my own and can send you the recipe if you like)

Directions

  • Slice the baguette in half - you can butter it if you like - I don’t

  • Sprinkle as much stilton on the bottom as you like

  • Melt butter or bacon fat in a pan.

  • Add onions and mushrooms.

  • Remove them once they are slightly browned

  • Add slices of beef and saute till brown then remove from pan.

  • Add a splash of Guinness to deglaze pan - I add the beef onions and mushrooms back in. Then put everything on a sandwich and enjoy.
