Spiced Gluten Free Batter
I don’t know where I came upon this recipe but I love it as an alternative to beer batter for fish.
I always make goujons because I love the batter and its easier to fry them in a small amount of oil or lard.
I use it for battered fish or vegetables. I do grind my own chickpea and rice flour because I don’t have to keep a stock of different types of flours.
Ingredients
1 cup gram flour (chickpea flour)
1/2 cup rice flour
1 tsp salt
1/2 tsp cayenne powder
1-2 tsp your favourite curry powder
1 tsp garlic powder
1 tsp baking powder
some chopped fresh chilli (optional)
water to mix
Directions
Mix all dry ingredients
Add enough water to make the batter thick enough to coat the back of a spoon
Coat your veg or fish and fry in hot oil
