Wild rice & mushroom soup
Ingredients
2 tablespoons butter
¼ cup - Wild Rice (UNCOOKED)
8oz Mushrooms
1 ½ cup Berkshire Pork Bone broth
¼ cup - chopped onion
¼ cup - chopped celery
Salt to taste
1 clove minced garlic or ½ teaspoon dried garlic
½ teaspoon Poultry Seasoning or a mix of parsley, thyme and marjoram
½ teaspoon Black Pepper
1 cup Coconut milk (you can just use milk if you prefer)
Directions
Put the instant pot on saute. Add butter and sauté sliced mushrooms
Add Wild Rice, Pork bone broth, chopped onion, chopped celery, Black Pepper, Salt, Poultry Seasoning, coconut milk and minced garlic. Stir well. Cover it.
Pressure cook it on high pressure for 45 minutes. Quick release pressure.
Serve.
