Wild rice & mushroom soup

 Ingredients 

  • 2 tablespoons butter

  • ¼ cup - Wild Rice (UNCOOKED) 

  • 8oz Mushrooms

  • 1 ½ cup Berkshire Pork Bone broth

  • ¼ cup - chopped onion

  • ¼ cup - chopped celery

  • Salt to taste

  • 1 clove minced garlic or ½ teaspoon dried garlic

  • ½ teaspoon Poultry Seasoning or a mix of parsley, thyme and marjoram

  • ½ teaspoon Black Pepper 

  • 1 cup Coconut milk (you can just use milk if you prefer)

Directions

  • Put the instant pot on saute. Add butter and sauté sliced mushrooms

  • Add Wild Rice, Pork bone broth, chopped onion, chopped celery, Black Pepper, Salt, Poultry Seasoning, coconut milk and minced garlic. Stir well. Cover it.

  • Pressure cook it on high pressure for 45 minutes. Quick release pressure.

  • Serve.
